The trouble
With BBQ is the
Number of cups of
Sugar dumped into the
Sauce and the inability of
Most places to smoke sausage
Well done yet there are a few
BBQ places that take pride
In first-rate smoked meat
And I recall attending a
Family reunion in the
Southern Illinois
Countryside
Where a
BBQ
Plate was
Near perfect
Except the cheese
Cake I had been eyeing
On the menu turned out to
Be southern not New York style
Which means a foamy light
Consistency not a heavy
Cake-like dessert and
I am reminded of the
Cheesecake from
A box mix I made
One supper by
The trail in a
Wilderness
Up near
9,000
Feet
On
A cold
Evening
By an icy
Stream that
Surprisingly did
Turn out perfectly
Though the location
And ravenous hunger
May have had an undue
Influence on judgement.
Hard to find good BBQ
So high up but then
Hard to find BBQ
Without the ton
Of sugar most
Anywhere. I
Wonder if
Splenda
Would
Work
But
Why not
Just some
Spicy jerky
Beef or deer,
Maybe sausage if
You scrape the mold off?
